Brooke Cooks - Summer Fruit Cobbler

I made this cobbler yesterday for the Fourth of July.  I used strawberries and blueberries because they are red and blue, but the addition of peaches (my dad picked some up at the orchard just for this cobbler!) made this pie fantastic.  Feel free to supplement raspberries for some or all of the strawberries (just add a little extra sugar).  The cobbler is easy to make and SO GOOD, especially with vanilla ice cream.  We made our ice cream from scratch, but you could always just pick some up at the grocery.

Summer Fruit Cobbler

1/2 cup packed brown sugar
2 TB cornstarch
3/4 cup water
1/2 TB ground cinnamon
1 cup flour
1/2 + 2 TB white sugar
1 1/2 tsp baking powder
1/2 cup skim milk
1/4 cup melted butter
3 1/2 cups sliced fresh peaches
2 cups diced fresh strawberries
2 cups fresh blueberries

1. Heat oven to 350 degrees.  Spray a large baking dish (I used a 10x13 cake pan) with cooking spray.  Combine chopped fruits.

2. In a saucepan, combine brown sugar, cornstarch, and water.  Heat until thick, about 1-2 minutes.  Add fresh fruit and allow fruit to cook down some (just a few minutes).

3. In a separate bowl, combine flour, 1/2 cup white sugar, baking powder, milk, and butter.  Stir until mixed.

4. Pour fruit and syrup into baking dish.  Spoon batter over top of fruit mixture.  It is ok if some spots are not covered.

5. Place pan on top of a cookie sheet (in case the cobbler runs over).  Bake at 350 for 25 minutes.  Top with 2 TB granulated white sugar and bake for an additional 10 minutes.

6. Allow to cool, then enjoy plain or with vanilla ice cream!
