Apple Crisp is the perfect treat this time of year! I made this modified recipe based off of the apple crisp my dad makes every fall. This version is pretty low in fat and sugar, but still tastes great. Pick up some apples at your nearby orchard or buy local organic apples for the best flavor. I used a mix of organic Gala and Honeycrisp, but many prefer tarter apples for pies.
6 apples (medium-large)
2 Tb honey or maple syrup
3 tsp cinnamon, divided
1 Tb butter, softened
2 packets Maple & Brown Sugar instant oatmeal
6 Tb brown sugar, divided
1 tsp water
Preheat oven to 350. Peel and slice apples. I cut mine into 8 slices each so they are still a little firm after they are cooked. Arrange apples in an 8 or 9 in round cake pan.
Drizzle apples with honey or maple syrup. Sprinkle with about 2 tsp cinnamon.
In a medium bowl, cut butter into both packets of instant oatmeal, 4 Tb brown sugar, and remaining cinnamon. Sprinkle over top of apples. On top of that, sprinkle the remaining 2 Tb brown sugar. Drizzle about 1 tsp water over top of crisp.
Bake at 350 for 50 minutes on lower rack. Allow to cool for about 10 minutes, then serve and enjoy!
