Brooke Cooks - Avocado Salad

I tried a salad similar to this one at a local vegetarian restaurant about a month ago and I've been crazy for it ever since.  So after craving one all day last week, I was disappointed when I called after work and was told that it was too late to order food.  So instead I went to the grocery store and picked up the ingredients to make my own.  And you know what?  It was just as good (and unbelievably easy!).

1 avocado
1 package extra firm tofu
Newman's balsamic vinaigrette
romaine lettuce
2 tomatoes
shredded cheddar cheese
tortilla chips

Dice and marinate tofu in balsamic vinaigrette.  Wash and chop romaine, tomatoes, and avocado.  Toss with tofu and vinaigrette.  Top with shredded cheese and tortilla chips.  Enjoy!

anyway, off topic, but when you first put softclaws on your kitties, was there an adjustment period? 7 of them stay firmly in place, but the other 3, i have replaced multiple times in the last 2 weeks. i have gone through half a pack on those 3 claws. unsure if i am doing something wrong, or if she is just not used to them yet (i still see her biting at them)

Oh my goodness, this sounds delicious! I used to hate avocado but I've completely switched to loving it now, this sounds great.

big YUM! make sure the cheddar is animal starch free :) I just learned that cheese is not always a veggie product :(

This was good, although I think I would have preferred if the Tofu was grilled. Still it was a great dish!

Anonymous, I'm sorry about the comment issue! As far as the Soft Paws, one of my cats was totally ok with them (which surprised me, since she is fairly high-strung) while my easy-going, laid-back Chloe kept trying to bite them off. They were more successful when I used extra glue. How much are you using? Perhaps try using more glue? But I do think there is an adjustment period. Keep me updated - I really hope the work out!

Alaina, that's funny - I used to be the same way (the color and texture are a little off-putting). But like you, I LOVE avocado now!

Crystalicious, I will need to look into that. The place where I got it used vegan cheese - I have only tried that a few times but I'll check it out. Thanks!

Anonymous, glad you liked it! I'm going to try adding some grilled corn and black beans next time, so I'll toss some tofu in with them and see how that tastes! I also found out that the place I originally got the salad from marinates their tofu in molasses, so I'm going to give that a try too!
